Moroccan pancakes with nadugi and tomatoes

An amazing mix of Morocco and Georgia on a plate is perhaps the most original way to pay tribute to the Slavic Maslenitsa. The dough for the pancakes is mixed with semolina with the addition of wheat, vanilla and sugar, and they are baked in a warm, but not hot frying pan, only there they will become lacy. Georgian influence - the filling is made of nadugi cheese with stewed vegetables. Khatuna Kolbaya, owner of Saperavi Café, shared the recipe with us.

Eggplant rolls with nadugi

A classic of Georgian cuisine from Badri Lemonjava, chef of Megobari. Unlike those rolls that Soviet housewives usually prepared for the holiday table, inside the eggplants here is not rough mayonnaise, but young nadugi cheese with a neutral milky taste and creamy texture. This completely changes the final taste of the dish: fried eggplants in combination with nadugi have a nutty flavor, and green adjika sharpens the long-known culinary plot.

Cheese sauce with cilantro

Cilantro cheese sauce is a refined European recipe that combines the delicate notes of goat cheese and nadugi cheese with the refreshing greenery of cilantro. Its roots can be traced back to traditional cuisine where dairy products play a key role. The thick, velvety texture of matsuni gives the sauce softness, while fresh cilantro adds zest. The flavor is a harmonious blend of creamy tenderness with a slight tang from matsuni and herbal freshness from cilantro. This sauce pairs perfectly with meat, fish, vegetable dishes or as a dip for crispy bread. It not only enriches the taste of dishes but also adds an exquisite aroma, making every meal special.
