
Manitoba (strong) flour is a strong wheat flour of hard Canadian wheat with a very high content of protein and gluten (W 350 and above), giving a firm, elastic, well-stretching dough resistant to long fermentation. It is used for panettone, sweet bread, brioche, ciabatta, baguettes, long-proofed pizza and as an addition to weak flour to strengthen the structure.
