Maldon sea salt is an English sea salt in the form of large hollow pyramid flakes, crunchy, easily crushed between the fingers, with a clean salty taste without bitterness. It is used as a finishing salt: sprinkled over steaks, salads, vegetables, bread, focaccia, caramel, chocolate and nut desserts just before serving for texture and bursts of saltiness.

The chef of the Brodo restaurant shared with us the recipe for the O2 festival menu.
