Malaxiang (Sichuan spice blend)
A ground Sichuan spice mix of Sichuan pepper, chilli, anise and cassia, dark red, with a 'numbing and heat' effect, in chilli oil, wok stir-fries and braised meat.

Malaxiang (the Sichuan 'ma la xiang' blend) is a ground spice mix of Sichuan pepper, dried chilli, star anise, cassia, fennel, clove, cumin, black cardamom and salt, dark red, with the 'numbing and heat' effect (ma la) and a deep spiced aroma. It is added to chilli oil, wok stir-fries, malaxiangguo (dry spicy wok), braised meat, chuan skewers and noodles for a spicy Sichuan flavour.
