
Leg of lamb (gigot) is the hind leg of a sheep or lamb on the bone (sometimes with part of the pelvis), a classic festive cut for roasting whole, with firm pink-red meat, thin membranes and a moderate layer of fat. It is studded with garlic, rubbed with rosemary, thyme and mustard and roasted to a pink doneness French-style, served with flageolet beans, potatoes and a jus gravy.
