
Lavender syrup is a clear sweet syrup of a pale lilac tint of sugar, water and an infusion of lavender flowers, with a floral-herbal aroma and a light spicy bitterness. It is added to coffee (latte, raf), lemonades, tea, cocktails, poured over pancakes and ice cream, put into creams, ganache, macarons, madeleines and sorbets.
