
Kvass wort (concentrate) is a thick dark brown extract of rye malt, rye and corn flour (or of an infusion of rye bread), sweetish, with a rich taste and aroma of baked malt. It is diluted with water, sugar and yeast or a starter are added and it is fermented into homemade kvass; it is also used in dough for rye and Borodino bread, in marinades and sauces.
