Sesame sauce is a creamy sauce based on tahini or ground roasted sesame with water, lemon juice, garlic, salt and vegetable oil (in the Asian version with soy sauce, vinegar and sugar), light beige, slightly thick, with a rich nutty taste and a light bitterness. It is served with falafel, shawarma, grilled vegetables, salads, noodles, tofu and meat and used as a dip and dressing.

The recipe was shared with us by Evgeny Korsun, chef of the Twin Tigers restaurant.

Broccoli raab is noticeably different from the cabbage of the same name - its taste is sharp and ringing. It must be blanched carefully so that the fibers remain intact. Recipe from the Redbox restaurant.
