Oak bark

Oak bark
The dried ground inner bark of oak with a very astringent taste for infusion when salting cucumbers and mushrooms and herbal teas.

Oak bark is the dried ground inner bark of young oak branches, grey-brown, with a very astringent, tart taste due to a high tannin content. In cooking it is used sparingly: for smoking and as an infusion when salting cucumbers and mushrooms (for crunch), in herbal teas and as a component of bitter tinctures and balms.

Elven Herbal Infusion
Elven Herbal InfusionAuthor's cuisine | Drinks

Recipe from the book "The Witcher. Unofficial Cookbook" by Olga Limanets. In the story "The Last Wish" Geralt first met Yennefer. He had to turn to the sorceress because of an incident with a genie, who seriously traumatized the poet Dandelion, a close friend of the witcher. Dandelion was between life and death, only magic could restore his health. While Yennefer cast a spell on the poor poet, Geralt waited for the completion of the magical manipulations in the company of the elf Hiredan. The elf was in love with Yen, but, unfortunately for him, not mutually. To brighten up the wait, Hiredan treated Geralt to a herbal infusion.

Smoky shashlik in a frying pan

Skewers with smoke on a skillet are a masterful embodiment of campfire aroma in a kitchen setting. This recipe combines the juiciness of marinated pork with the spicy fragrance of khmeli-suneli, garlic, and thyme. The special charm of the dish comes from oak bark chips, creating a light smoky hue as if the skewers were cooked over an open flame. The tradition of cooking meat with smoke has roots in various culinary customs but is adapted here for urban convenience. During frying, juices and spices saturate the meat, giving it a rich flavor and appetizing golden crust. Such skewers are perfect for cozy evenings when you want to touch the atmosphere of a picnic while staying warm at home.
