
Smoked tongue is beef or pork tongue boiled, peeled, cured and lightly smoked, pink-grey in cross-section, firm, tender, with a fine-grained texture, a saltish-smoky taste and a light spice aroma. It is sliced thin onto meat boards, open sandwiches and into salads (with peas, Olivier), served with horseradish and mustard and put into cold and hot appetizers.
