Smoked suluguni cheese is a Georgian brined pulled-curd cheese lightly smoked to a golden-brown rind, with a firm layered stretchy body, a salty taste and a smoky aroma. It is sliced for appetizer platters and with wine, added to khachapuri, lavash, hot sandwiches, salads, on pizza and fried in slices until melted with a browned crust.

Tartlets with squid and suluguni are a refined combination of seafood and the smoky aroma of smoked cheese, enclosed in a crispy tartlet. This dish is an ideal choice for a festive table where treats should surprise and delight guests. Squid, carefully cooked, retains its tenderness, while fresh cucumbers add lightness and juiciness to the composition. Smoked suluguni adds a spicy note, and mayonnaise with sour cream unites the ingredients into a harmonious mass. Dill and green onions complete this ensemble with fresh aromatic accents. The history of such tartlets goes back to the world of modern author cuisine, where traditional products are reinterpreted with a creative approach to create new gastronomic masterpieces.

Chanterelle julienne is an exquisite dish of French cuisine, featuring a rich creamy-mushroom flavor with subtle hints of smoked cheese. Historically, julienne in French cooking referred to a method of cutting vegetables, but later the name became associated with hot appetizers baked in creamy sauce. Chanterelles, with their delicate nutty aroma, pair wonderfully with the tenderness of veal heart. The creamy sauce that soaks the ingredients adds a special softness and depth of flavor to the dish. A poached egg added before serving contributes a velvety texture, while fresh herbs and drops of olive oil complete the composition. Elardji is a traditional dish of Georgian cuisine known for its gooey consistency and rich cheese flavor. The classic version uses corn flour, but this old Georgian recipe offers millet, giving the dish a softer texture. Historically, elardji was made in western Georgia, especially in the Samegrelo regions where sulguni cheese is an important element of local cuisine. This version combines two types of sulguni: classic and smoked, making the flavor deeper and more aromatic. Delicate butter and fresh mint complement the cheesy delight with subtle creamy and refreshing notes. Elardji is perfect as a standalone dish or as a side to meat and vegetables. Its gooey structure makes each bite particularly enjoyable and unforgettable.

This dish is a true celebration of flavor, inspired by American cuisine with its focus on comfort and rich textures. The crispy Brioche bread with a honey hue serves as the base for a delicate baked egg, creating a harmony of airy softness and aromatic crust. The golden-brown chicken breast adds meaty richness, while the smoked suluguni cheese provides a subtle tanginess. Garnished with a mix of fresh salad leaves and generously drizzled with balsamic sauce, the dish acquires an exquisite acidity. It’s the perfect choice for breakfast that delights not only in taste but also in presentation aesthetics.

Easy to prepare and very elegant on a plate, salad with squid, vegetables and smoked cheese is perfect for guests or just as a treat for yourself. Tender to taste, the mollusks are quite affordable, unlike other seafood, and literally a couple of minutes are enough to cook them. Mini squid are better suited for this salad - they are good because they get beautiful scorch marks from the grill. To make it easier to cut them up, you can slightly freeze the fresh carcasses.
