
Violet liqueur (creme de violette) is a sweet liqueur of a delicate lilac colour on spirit with an infusion of violet flowers (sometimes with vanilla and spices), with a delicate sweet-floral aroma and a taste of candied violets. It is used in cocktails (Aviation, Blue Moon), poured over ice cream and desserts, put into creams, macarons, panna cotta, marshmallow and used to tint light floral desserts.

The recipe was shared by the head bartender of the bar "Kotelnaya" Daniil Fainberg. A twist on the classic cocktail French 75: a mix of gin, violet liqueur, passion fruit syrup, lemon juice and prosecco turns out to be a light summer story, a practically alcoholic lemonade.

The cocktail got its name for its lightness and delicate violet color. In the first years after its invention at the beginning of the 20th century, violet liqueur infused with berries was also used, and then the cocktail became more like the night sky.
