Dried wolffish shavings are thinly shaved lightly salted and dried wolffish meat, light beige, fibrous, dryish, with a concentrated saltish-fishy taste and a light umami. It is eaten as a high-protein snack with beer, crumbled into salads, cream soups and rice bowls as a crunchy salty topping, added to spreads and served on open sandwiches.

The recipe was shared with us by the chef of the Björn restaurant Andrey Molchanov.
