
Coconut curd (vegan) is a vegan curd analogue of coconut flesh, coconut milk or yoghurt with a thickener and lemon juice or a culture, white, grainy or creamy, with a mild sweetish-coconut taste and a light tang, lactose-free. It is eaten with fruit, honey and granola, put into curd fritters, bakes, fillings for pancakes and dumplings, desserts and spreads.

The cheesecakes are filling, sweet, and fragrant — a complete breakfast, nothing more is needed. The recipe was shared by Kirill Gubin, vegan chef at Perelman People.
