
Bird cherry mashed with sugar is a raw preparation of ripe bird cherry berries ground with sugar without cooking (sometimes together with the stones, which give an almond aroma), dark purple, slightly thick, with a rich taste, an astringent tartness and a characteristic almond-marzipan aroma. It is eaten with tea and spread on bread, put into fillings for pies, dumplings and cakes, diluted into kissel and fruit drink and added to creams.
