
Ripe pu-erh tea paste (chagao) is a concentrated extract of aged fermented ripe pu-erh tea reduced to a dense resin-like mass of a dark brown, almost black colour; it dissolves in hot water, giving a strong dark infusion with an earthy, woody-nutty taste and a mild sweetness without bitterness. A piece is brewed as a quick tea, added to drinks and used for tonic blends.

Pu-erh 'Chagao' with spices, pepper, and citrus is an exotic drink inspired by ancient Chinese tea traditions. Shu pu-erh chagao, a concentrated tea extract, forms the base of this elixir enriched with notes of orange, lemon, and spices.
