
Calamansi puree is a smooth yellow-green mass of the flesh and juice of the Philippine citrus calamansi, very sour, aromatic, with a bright taste between lime, mandarin and kumquat and a light pleasant peel bitterness. It is used in cocktails, lemonades, sorbets, mousses, creams, tarts and cheesecakes, in marinades and dressings for fish and seafood and as a substitute for lime and lemon.
