
Ascorbic acid powder (vitamin C, E300) is a white crystalline powder with a clean sour taste, an antioxidant and acidifier. In cooking it is added by the pinch to dough as an improver (it strengthens gluten, speeds proofing), to water to prevent browning of fruit and vegetables, to compotes, preserves, juices and drinks to keep colour and taste.
