
Aperol (bitter orange aperitif) is an Italian bright orange bittersweet aperitif on an infusion of bitter orange, rhubarb, gentian and herbs, of a low strength (around 11%), with a citrus, slightly herbal taste and a moderate bitterness. It is the base of the Aperol Spritz cocktail (with prosecco and soda) and other light aperitifs, added to citrus sorbets, jelly and dessert sauces.

The red Aperol Spritz is undoubtedly the main cocktail of the summer, but by autumn we have become quite tired of it. It is time to retell the recipe in a new way, as, for example, Azamat Yakubov, head bartender of the Zafferano City restaurant, does. The bitterness of the orange aperitif that fills the wasp's stomach here dissolves in an aromatic cloud of watermelon pulp and raspberry puree. At the same time, all the advantages of the original drink - lightness, large volume and the magic of the magical bubbles of prosecco - are also present in the new interpretation.
