
Aged rum is a dark distillate of molasses or cane juice matured in oak casks for several years, amber-brown, with a mild rounded taste, notes of caramel, vanilla, dried fruit, spices and oak and a long warm finish. It is drunk neat and on the rocks as a digestif, added to cocktails (Old Fashioned, mojito, daiquiri), coffee and used in creams, soaking syrups and dessert sauces.
