Agave tequila is a Mexican strong distillate of the fermented juice of the hearts of blue agave, clear (blanco) or golden-amber after oak ageing (reposado, añejo), with a characteristic vegetal-peppery taste of baked agave, citrus notes and a light sweetness. It is drunk neat with salt and lime, in cocktails (margarita, Paloma, tequila sunrise) and used in marinades and sauces.

The strength of tequila is diluted with agave nectar, pineapple shrub and sorrel. Recipe by Taco Bar head bartender Ilya Pudovkin.
