Agave nectar (syrup) is a liquid sweetener of the juice of the hearts of blue or black agave, from light golden to dark amber, sweeter than sugar, with a neutral or light caramel taste and a low glycaemic index; it dissolves well in cold liquids. It is used instead of sugar and honey in coffee, tea, cocktails, smoothies, lemonades, baking, desserts, sauces and dressings, including in vegan recipes.
