Heat a little oil in a pan, pat the sardines dry with paper towels, cut the bacon slices in half, wrap the sardines with bacon and secure with a toothpick.

Fry the sardines for two minutes until the bacon is crispy. Place the fish on paper towels, then in the same pan, adding oil, fry slices of bread (without crust) turning until golden-brown, for half a minute, and also transfer to paper towels.

Remove the toothpicks, arrange the fish on the bread, three pieces per slice, and sprinkle with herbs (a little parsley, tarragon, basil, and scallions).
