
Pearl sugar (nib sugar) is large dense opaque white granules of pressed sugar of an irregular shape that barely dissolve or melt during baking, keeping their crunch and white colour. They are sprinkled over Belgian (Liège) waffles, buns, brioches, sweet rolls, cakes, cookies, stollen and panettone before baking for a decorative 'pearl' layer and sweet crunchy specks.
