
Duck bones are rib, back and tubular bones of the duck with meat scraps and fat, rich in collagen and umami taste. They are browned to a dark golden colour and long-simmered with onion, carrot, celery, bay and spices for a rich duck stock, a base for dark sauces, soups, ramen noodles and stews.
