
Tomato passata (sieved tomatoes) is peeled and seeded ripe tomatoes sieved into a smooth homogeneous puree without cooking or after light reduction, bright red, of medium thickness, with a clean fresh tomato taste and a light tang. It is used as a quick base for sauces for pasta and pizza, soups, stews, shakshuka, lecho, chilli con carne, gravies and braised dishes.
