
Tamarind sauce is a thick dark brown sweet-sour sauce of tamarind pulp, sugar or palm sugar, salt, chilli, garlic and spices, glossy, with a bright fruity-sour taste and a light spiced bite. It is served as a dipping sauce for samosas, pakoras, spring rolls and snacks, added to pad thai, curry, chutney, marinades and dressings for Asian dishes.
