Tamarind paste is a thick dark-brown paste of the pulp of tamarind pods with a bright sweet-sour taste and a fruity depth. It is thinned with water and added to pad thai, curries, soups, sauces (Worcestershire, HP), marinades, chutneys and drinks for acidity.
