
Sweet pepper paste (Turkish biber salçası) is a thick dark red paste of reduced and pureed sweet red pepper with salt and vegetable oil, sometimes sun-dried, with a rich sweetish-vegetable taste, a light smoky note and umami. It is added to soups (mercimek), stews, lecho, pilaf, marinades, sauces, lahmacun filling and spread on bread with butter.
