
Squid ink pasta is pasta of durum wheat flour with cuttlefish ink added to the dough, glossy black, with a light marine umami note and a slightly saltish note, otherwise close in taste to regular pasta. It is boiled al dente and served with seafood (shrimp, mussels, squid, clams), cream, garlic-butter and tomato sauces.
