Cashew sour cream is a vegan sour cream analogue of soaked and ground cashews with lemon juice or apple vinegar, water and salt (sometimes with probiotics), white, thick, smooth, with a mild creamy taste and a characteristic sour cream tang, free of lactose and cholesterol. It is put into borscht, soups and sauces, used to dress salads and potato pancakes, in dips, baking and as a topping for pancakes and tacos.

The recipe was shared by Perelman People vegan chef Kirill Gubin. A complex dish using molecular cuisine.
