
Satsivi sauce (walnut sauce) is a Georgian cold nut sauce of ground walnuts, garlic, onion, wine vinegar and spices (utskho-suneli, khmeli-suneli, coriander, Imeretian saffron, cinnamon, clove), cream-beige, thick, aromatic, with a nutty-spiced taste and a light tang. It is served with boiled or fried chicken and turkey (satsivi proper), fish, aubergines and vegetables.
