
Olivier salad is a festive Russian layered or mixed salad of boiled potatoes, carrots, eggs, salted or pickled cucumbers, green peas and boiled sausage (or boiled meat, chicken, tongue) cut into cubes and dressed with mayonnaise, with a mild, filling, slightly salty-sourish taste. It is served chilled as a cold appetizer at any festive table.
