
Rose petal paste (gulkand, gulbesheker) is a thick aromatic paste of fresh petals of fragrant roses ground with sugar or honey and aged into a homogeneous sticky mass of a pink-burgundy colour, very sweet, with an intense floral aroma and a light astringency. It is eaten by the spoon with tea and milk, spread on lavash and bread, put into fillings for baklava, Turkish delight, lassi, kulfi, desserts and ice cream.
