
Romanesco is a lime-green variety of cauliflower with a head of spiral conical turrets of a fractal shape, with a firm crunchy texture and a mild creamy-nutty taste, sweeter than regular cauliflower. It is boiled, steamed, roasted, fried and served as a side, in salads, cream soups, pasta and with cheese sauce.

A beautiful seasonal recipe with a ton of ingredients, including autumn honey mushrooms. There is no need to be afraid of the season, these days frozen honey mushrooms can easily be found in large supermarkets. The recipe is taken from the book by Mark Vetri "Cooking Pasta.
