Porter (dark beer) is a dark top-fermented beer of roasted and caramel malt, almost black with a ruby glint and a dense creamy head, with a rich taste of roasted malt, coffee, dark chocolate, dried fruit and liquorice and a moderate hop bitterness. It is drunk lightly chilled, served with roasts, game, oysters and desserts, and in cooking used for braising meat, sauces and dark bread.
