
Crab shells are the meat-cleaned hard shells, claws and legs of crab left after butchering, bright red-orange after boiling, with a concentrated sweetish-marine crab aroma. They are roasted and simmered for a rich crab stock and bisque, crab butter and sauces for pasta and risotto, and also used to infuse an aromatic oil and as a base for seafood soups.
