
Game meat trimmings are small pieces and offcuts of the flesh of wild birds and animals (roe deer, deer, boar, hare, duck), dark red, lean, firm, with a rich game taste and a light 'wild' aroma, often with sinews and membranes. They are marinated and used for mince for cutlets, sausages, pates and terrine, made into stew, goulash, pasta sauce and a rich dark stock.
