Nelma (Siberian white salmon) is a large northern fish of the whitefish family with a silvery body, white or slightly pinkish fatty tender meat, few bones, a subtle sweetish taste and a pleasant fresh aroma. It is lightly salted and cured (including as stroganina), dried, smoked, made into balyk, fried and baked as steaks, cut into sashimi and tartare and served as a delicacy.
