
Lamb meat is the light red, tender meat of a young sheep with fine fibres, soft fat and a delicate taste with no strong smell. It is fried as steaks and chops, roasted as leg and rack, braised and slow-cooked (tagine, stew, navarin), grilled and cooked in a cauldron, cut for kebab and pilaf and ground into mince.
