Soured (fermented) apples are whole sour or sweet-sour apples (Antonovka) kept in a brine of water, salt, sugar, malt or rye flour, with currant and cherry leaves and spices, sweet-sour, slightly fizzy, refreshing, with firm crunchy flesh. They are served as a cold appetizer with meat, game, vodka and porridges and added to salads and with stir-fries.
