
Mandak (wild angelica stalks) are the young juicy stalks and leaf stems of a wild umbellifer plant (a relative of angelica), common in Armenian and Caucasian cuisine, green, crunchy, with a pleasant spiced-grassy, slightly sourish taste. They are peeled, boiled or braised, sauteed with egg and onion (mandakov dzvatsegh), pickled, salted for winter, put into salads and fillings and served as a seasonal green.
