Elk (moose) meat

Elk (moose) meat
Dark red lean elk meat with a firm fibrous structure and a pronounced game taste, needs soaking, for braising in wine, goulash and cutlets.

Elk (moose) meat is dark red lean elk meat with a firm fibrous structure, almost without fat, with a pronounced game taste and a light sweetness; it needs soaking and marinating. It is long-braised in wine, cream or sour cream with juniper and berries, made into goulash, stir-fries, cutlets and sausages, dried and smoked; the leanness is offset by adding fat when frying.

Moose cutlets with pork

Moose and pork cutlets are a true embodiment of Russian hunting cuisine, combining the wildness of nature with homey comfort. The rich flavor of moose meat harmoniously complements the fattiness of pork, creating a tender, juicy texture. Rye bread soaked in milk adds softness to the cutlets, while garlic and black pepper add spiciness. Fried in olive oil until crispy, they become an ideal treat for both family lunches and festive gatherings. Served as a side dish is a salad of pickled cucumbers and onions dressed with fragrant sunflower oil and a drop of honey that highlights the depth of flavor. The dish reflects the traditions of Siberian and Russian hunters, conveying the atmosphere of forest expanses and evenings by the campfire.

Komi-Permyak salad with corned elk meat, sauerkraut, soaked lingonberries and mashed potatoes

The recipe is taken from the book "The North Warms" by Rashid Rakhmanov, published by "Eksmo". "Probably, this salad combines all the ways in which the Uralians of that region prepared food for the long winters. This includes salting elk meat (corned beef), pickling cabbage, marinating mushrooms, and soaking berries (for example, lingonberries). You will find several recipes in this book in the relevant sections. I will dwell separately on corned elk meat. Like many northern dishes, corned beef appeared due to the need to store food for the long winters. This is how elk and deer meat was preserved: it was rubbed with salt and placed in a kind of refrigerator - in a hole in the frozen the ground, lined with stones, and then covered with earth. This method was common among many peoples of the North (Yakuts, Evens, Evenks, Nganasans). For me, this salad embodies the history and cultural traditions of the peoples of the Northern Urals. We use wet salting because it has some advantages over dry salting. With wet salting, salt penetrates the meat faster and is distributed evenly, the product turns out tender and moderately salty (unlike dry salting, where the meat is greatly dehydrated, becoming dry and tough ) . In addition, it is easier to saturate the salt solution with spices

Karelian Moose Cutlets

Moose meat cutlets in the Karelian style are a true embodiment of northern traditions. The wild and rich taste of moose meat is softened by the creamy aroma of bread soaked in milk, while pork fat adds juiciness. The breadcrumb coating creates a crispy crust, and long simmering in a delicate sauce made from vegetable broth, sour cream, and tomato paste reveals all the flavor nuances. This recipe comes from Karelia, where game dishes have always held a special place in the cuisine. The cutlets pair wonderfully with mashed potatoes, buckwheat, or fresh vegetables. Their rich taste and aroma evoke the coziness of family dinners by the fireplace, while subtle herbal notes add freshness. An ideal dish for connoisseurs of the gastronomic heritage of northern regions.

Moose in creamy sauce

Moose in cream sauce is a dish that transports us to northern forests, where game has been valued for its rich flavor and nourishment for centuries. Marinated in spices, the meat becomes incredibly tender and soft, while slow cooking reveals its deep taste. The cream at the end gives the dish a creamy texture and exquisite velvety feel, softening the natural density of the meat. A light acidity from balsamic vinegar highlights the rich notes of the game, while sautéed onions add zest. This dish is perfect for a festive dinner, complemented by a glass of red wine and a side of roasted potatoes or fresh vegetables. Moose in cream sauce is a gastronomic journey into the depths of European culinary traditions where quality and flavor harmonize.
