
Locust bean gum (carob gum, E410) is a plant polysaccharide from the endosperm of carob tree seeds in the form of a pale tasteless odourless powder, a thickener and stabiliser that gives creams and ice cream a smooth, 'chewy' texture and prevents ice crystals from forming. It is used in ice cream, cream cheeses, sauces, fillings, plant milk and bread, often paired with xanthan and carrageenan.
