
Lemon puree is a smooth pale yellow mass of the flesh and juice of lemon (sometimes with zest and a little sugar), slightly thick, very sour, with a bright fresh citrus taste, an intense aroma and a light pleasant peel bitterness. It is used in lemon curd, mousses, creams, tarts, cheesecakes, sorbets and cocktails, in marinades and sauces for fish, chicken and seafood.
