Almond dough (frangipane) crumble is a crumbly shortbread-nutty crumb of a mix of ground almonds (or marzipan), butter, sugar and flour, light beige, with a rich sweet almond-marzipan taste. It is scattered on top of tarts, fruit pies, cakes and croissants before baking for a crunchy layer, used as a filling and topping for desserts and baked as separate crumbs for decoration.

Recipe from Andrey Zavarnitsyn, chef of the restaurant Meatless.
