Spent coffee grounds are the moist pressed coffee residue left after brewing ground coffee, dark brown, with a rich coffee-chocolate aroma and a residual bitterness. In cooking it is used in small amounts for flavouring: mixed into moist chocolate dough, brownies, cream and ice cream, added to dry rubs for meat and as a 'smoky' accent, and also as a natural colouring.

The recipe was shared with us by the pastry chef of the Nordic restaurant Katerina Zueva for the O2 festival menu.
