
Kamats matsun (aged Armenian yoghurt) is an Armenian aged fermented milk product of matsun strained and condensed to the consistency of a thick paste or soft cheese, white, dense, with a pronounced tang, saltiness and a rich fermented-milk taste; it keeps longer than fresh matsun. It is diluted with water into the drink tan, used to season spas and soups, spread on lavash with herbs and served with meat and potatoes.
