
Ham bone is the bone from a boiled-smoked or dry-cured ham with scraps of meat, fat and cartilage, saltish-smoky, giving a rich aromatic stock with a smoky character when boiled. It is put into pea soup, bean and lentil pottages, shchi, borscht, potato soup and braised legumes, giving them a smoky salty taste and body.
