
Flambeed berries are fresh or frozen berries (cherry, strawberry, raspberry, blueberry, blackberry) quickly heated in a pan with sugar or caramel and doused with strong alcohol (rum, cognac, kirsch, liqueur) which is set alight, so the alcohol burns off and the berries are coated in a glossy syrup with a light caramel-alcoholic note. They are served hot with ice cream, pancakes, cheesecake and panna cotta.
